Chickpea and Tomato Salad

The shape, texture, and unique flavor of chickpeas make them a perfect salad ingredient. I will often add chickpeas to a salad when the meal’s main dish is on the lighter side. See the menu accompanying Pasta with Asparagus (page 67).

Israeli Salad

Sometimes Israeli salad is embellished with fresh herbs, olives, or radishes, which you can add if you’re so inclined. But here it is in its essential form, the way my father-in-law, Arie Tabak, makes it. He also serves fresh rye bread with it, to soak up the delicious liquid that forms as it stands.

Red Cabbage, Carrot, and Apricot Salad

Here’s a nice change of pace from “white” coleslaw. It adds a refreshing note to spicy meals and adds vibrant color to the plate.

As close to “classic” coleslaw as any of the slaws here, this is especially good with sandwich meals and veggie burgers. See the super-easy menu below. It’s a quick and nourishing meal you can make even if dinnertime finds you exhausted.

Seared Tuna with Chinese Salad and Ginger-Soy Vinaigrette

Salads are quick and painless to throw together on a work night, and you won’t feel like you’ll have to do double time at the gym the next day. If you’re on your own, this is also a speedy and healthy dinner for one: Just use one tuna steak and a few less vegetables. The colors of this sophisticated and simple salad really pop. I like hothouse cucumbers because they have minimal seeds and tender skin. The mustard packets that you get from Chinese takeout are really put to good use in this Asian vinaigrette.

Pan-Roasted Sirloin with Salad of Arugula, Sweet Peppers, and Olives

Avoid using a salad spinner to wash and dry the arugula—the leaves bruise easily. Instead, dunk them in a sink of cool water and lift them into a colander. Pat dry with a kitchen towel. Simple salt and pepper will form a crust on the steaks when you sear them. I don’t normally serve anything else with this warm steak salad except the rest of the bottle of Cabernet used in the vinaigrette recipe.

Sweet Potato, Red Garnet, and Yam Salad

Sweet potatoes are pale yellow, yams are deeper orange, and red garnets have a reddish hue. If you have trouble finding all three, just buy three pounds’ worth of what you can find. This colorful salad is perfect with roast pork, or on the Thanksgiving menu as a refreshing change from the traditional sweet potato dishes.

Slow-Roasted Four-Grain Salad

Very slow roasting—175°F in a covered casserole—is ideal for whole-kernel grains as well as wild rice. The earthy flavors of whole grains blend well with the flavors we usually associate with another classic—tabbouleh.

Salade Niçoise

This is my version of the classic French salad I enjoyed time and again in Nice. Roasting concentrates the flavor of fresh green beans.

Roasted Red Potato Salad with Herb Vinaigrette

This is a break from potato salads dressed with mayonnaise, and much tastier!

Black Bean Salad with Roasted Corn

Not only do the colors sparkle in this salad, but the flavors do, too. Roasting fresh corn on the cob produces irresistibly sweet little morsels. This is wonderful with roasted fresh salmon.
